Proso millet has Chinese origin. Cultivated since year 7,000 B.C., the seed is largely used in cuisines of India, South Korea and Japan. In Brazil, it is basically known as bird food, as it strengthens the birds’ down and beak. In some Asian regions, proso millet was introduced in cooking even before rice. Thousands of years ago the Chinese used it to make pasta with its flour. In Ancient Egypt, it was utilized to make bread. It is also very popular in India, as well as in Ethiopia, where injera, the country’s main dish, is made with proso millet flour. Also known as common millet, hog millet or white millet, proso millet is largely consumed by individuals under a macrobiotic diet. Proso millet is a gluten-free tasty grain source of carbohydrates, proteins, fatty acids, manganese, magnesium, tryptophan and phosphorus. There are several types of proso millet, but they have the same nutritional value. In Portugal, it is called milheto. This type of proso millet is small and has larger protein quantity. |
