Also known as sweet fennel, sweet anise, anise and false anise, the herb, which has a hollow stem, sheathed leaves and yellow flowers, is native to Mediterranean region. It has antiseptic, anti-inflammatory, calming, digestive, diuretic and expectorant qualities. In cooking, leaves (fresh or dry), roots, seeds and stems are used. As a vegetable, it is part of the alimentary culture of many European countries, especially in France and Italy. Leaves can be used in salads, beans, meats, sauces and pasta. Seeds flavor drinks. The taste of fennel is anise-like and its texture is similar to celery: crispy and slightly grooved. |
